Since starting Weight Watchers back in January, I am always looking for foods to snack on that help curb my cravings. My favorite go-to snack while watching nighttime TV was always chips and dip. Well, of course, there are very few dip choices when you are trying to eat healthily. I decided to lighten up one of the dips I take to family functions and it turned out AMAZING!
Roasted Red Pepper Dip
Serves 10 ~ 0 Freestyle Smartpoints
15 oz jar of roasted red peppers, drained and patted dry
1 cup Fage 0% Greek yogurt
1/2 cup fresh basil leaves
1/2 tsp garlic powder
1/2 tsp salt
1/4 tsp black pepper
2 tsp parsley
In a large bowl or food processor, add all ingredients and blend completely
Serve with your favorite veggies for a ZERO smartpoint treat or add some Good Thins Corn Chips but do not forget to calculate the points for the chips.
This roasted red pepper dip is so light and creamy. It would also be perfect for a spread on a sandwich or in a wrap. So many ways to get added flavor to normally bland foods. No one will even suspect it is Weight Watchers approved unless of course, you brag about it after they say it is fabulous.
