Weight Watchers Italian Chicken and Veggie Foil Packets

A very easy, low point Weight Watchers dinner that gives you great flavor!


  • 2 small boneless skinless chicken breast
  • 1 cup broccoli florets
  • 1 cup bell peppers sliced
  • 1/2 cup grape tomatoes sliced
  • 1 tablespoon olive oil
  • 1 tablespoon Italian seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • salt and pepper to taste


  1. Preheat oven to 400 degrees.
  2. Toss all ingredients into a gallon size ziplock bag and shake until combined.
  3. Spray a disposable loaf pan with oil and place chicken breast inside.
  4. Top chicken breast with vegetables until covered.
  5. Cover tightly with aluminum foil.
  6. Bake for 45-50 minutes(20-25 mins if chicken breast is cubed) or until the inside reaches 165 degrees.
  7. Remove from oven and let sit a for 5 minutes to rest.
  8. Serve immediately or place into meal prep containers.
