Weight Watchers Instant Pot Detox Soup

Weight Watchers Instant Pot Detox Soup

It is winter here in the Midwest and if you are from here then you know it has been a pretty harsh one thus far. I am counting down the days until we can move to Arizona LOL However, in the meantime, I will make soup and like it.

This is the best chicken noodle soup minus the noodles. It is only 1 Weight Watchers Freestyle point and has so many great flavors. I make this recipe once a month and freeze it in small containers so I can have an easy grab and go lunch option on our busy days.

Servings: 8

Weight Watchers Freestyle Points: 1

Ingredients:

1 Tbsp Olive Oil

1 onion, diced

3 large celery stalks, chopped

2 large carrots, peeled and chopped

1 cup mushrooms, sliced

5 tsp minced garlic

42 oz fat-free/low sodium chicken broth

2 bay leaves

½ tsp turmeric

½ tsp crushed red pepper flakes

1 ½ tsp sea salt

15 oz can chickpeas, drained and rinsed

2 medium boneless skinless chicken breast

3 cups fresh spinach/kale mixture

Instructions:

  • Press Saute button and when the Instant Pot says HOT, add olive oil, onion, celery, and carrots; stirring occasionally for 5 minutes.
  • Add in mushrooms and garlic, stirring another 3 minutes.
  • Add chicken broth, chicken breast, bay leaves, turmeric, red pepper flakes, salt, and chickpeas.
  • Lock the Instant Pot lid and set the vent to sealing.
  • Press Manual/Pressure Cook button for 8 minutes(12 minutes if the chicken is frozen).
  • When the Instant Pot beeps, allow to NPR for 10-15 minutes and then release the remaining pressure.
  • Remove chicken breast and shred with two forks and add back into the pot.
  • Click Saute button and add spinach/kale mixture. Stir occasionally for 5 minutes.

Weight Watchers Instant Pot Cauliflower Soup

On Sundays I try to meal prep for the week. Even though I work from home, I find that prepping my lunches ahead of time means I will actually eat something instead of getting all caught up in my work and skipping a meal. If you are a Weight Watchers member then you know how important it is to get all your points.

Weight Watchers Instant Pot Cauliflower Soup

One of my favorite quick recipes to prep is this Weight Watchers Instant Pot Cauliflower Soup. Not only is it full of flavor but it is only 1 Weight Watchers Freestyle point. This soup is super versatile and you can dress it up or down any way you like. 

Serves 6

Weight Watchers Freestyle Points: 1

Ingredients:

1 head cauliflower, roughly chopped

2 cloves garlic, minced

1 onion, diced

2 carrots, peeled and diced

2 stalks celery, diced

¼ cup all-purpose flour

4 cups fat-free chicken broth

1 cup unsweetened almond milk

1 bay leaf

Salt and Pepper to taste

Garnish: *not figured into weight watchers points*

Fat-free shredded cheddar cheese

Real bacon bits

Chopped parsley

Directions:

  1. Spray Instant Pot liner with non-stick cooking spray.
  2. Press Saute button and add garlic, onion, carrots, and celery. Cook, stirring occasionally until vegetables are tender.
  3. Add cauliflower and bay leaf. Cook, stirring occasionally for 3-4 minutes.
  4. Stir in flour until vegetables are well coated and cook until lightly browned.
  5. Pour in milk and whisk gently until liquid is slightly thickened.
  6. Slowly pour in chicken broth and hit cancel.
  7. Lock the Instant Pot lid and set the vent to sealing. Press soup or manual button and set time to 7 minutes.
  8. When Instant Pot beeps, allow to NPR for 5 minutes then release remaining pressure slowly until pin drops.
  9. Remove lid and use an immersion blender to blend any large chunks. It is okay to have some small chunks left.
  10. Serve and garnish with cheese, bacon bits, and parsley.

Since starting Weight Watchers I have found my biggest struggle is lunch options. Breakfast is easy and dinner is easy but by the time lunch rolls around I am either still full from breakfast or I get so busy that dinner is right around the corner. So basically I need really simple quick options or else I am going to just skip lunch altogether and I won’t get my points and basically I’ll stay fat(okay maybe not really but it is important to get all your points to maintain a healthy balance).

Simple lunch for me would be pizza but I rather not spend 8pts on a thin crust pepperoni slice when I could eat this quick Weight Watchers Hawaiian English Muffin Pizza. You can make them in just a couple of minutes and they are only 3pts for both halves.

So simple, so yummy, and only 3pts

  • 1 Healthy Life English Muffin, Lite
  • 2 tbsp pizza sauce
  • 1 slice Canadian bacon
  • 1/2 oz pineapple chunks, diced
  • 2 tbsp fat free mozzarella cheese

Split apart english muffin with a fork

Spoon 1 tbsp of pizza sauce onto each english muffin half

Top with canadian bacon, pineapple, and cheese

Place both english muffin halves into air fryer basket

Cover with a piece of parchment paper and air fryer trivet

Cook for 2 minutes at 370 degrees

Remove and serve!

Seems like I am always looking for new ways to make chicken breast. Since they are on the Zero Points Food List for Weight Watchers it is typically my go-to for dinner. However, chicken can get very boring real quick. Luckily, there are so many great ideas for spicing up dinner on Pinterest. I went through quite a few recipes and decided foil pack dinners seemed easy enough. Tossed in the usual spice concoction that I use on almost everything and went with it. So happy I did, because these Weight Watchers Italian Chicken and Veggie Foil Packets are AMAZING.

What are some ways you like to change chicken when you are in a rut? Have you made foil pack dinners before? I am going to take this recipe camping with us on our next trip. I bet it would be perfect on the campfire or the grill.

Weight Watchers Italian Chicken & Veggie Foil Packs ~ 3 smartpoints

Easy toss together dinner that is yummy and healthy

  • 2 skinless boneless chicken breast, small
  • 1 cup broccoli florets
  • 1 cup uncooked bell pepper, any color, sliced
  • 1⁄2 cup grape tomatoes, sliced
  • 1 Tbsp olive oil
  • 1 Tbsp Italian seasoning
  • 1 tsp garlic powder
  • 1 tsp smoked paprika

Preheat oven to 375 degrees

Mix Italian seasoning, garlic powder, paprika, and olive oil in a small bowl

Place chicken breast, broccoli, bell peppers, and grape tomatoes in a gallon size ziploc bag

Pour olive oil mixture in bag and gently toss until all ingredients are coated

Place chicken breasts in two disposable foil bread pan and top with veggies

Cover with foil and bake for 35-40 minutes or until chicken is cooked through

Weight Watchers Fruit Pizza

The biggest thing I missed when I started Weight Watchers was something sweet and refreshing. It took me a couple weeks to get familiar with the way Weight Watchers worked but once I did I realized it wasn’t so hard to stay within my points. It wasn’t like a typical diet and the Weight Watchers app makes it simple to track. I experimented with quite a few ways to make this Weight Watchers Fruit Pizza. Of course, you can change it up to fit your craving too.

I love how you can change up the ingredients of this Fruit Pizza in order to get different flavors. Id love to make one with PB2 and bananas next time. Even my kids loved this and they got to make it themselves so of course, theirs had fruit faces LOL

  • 2 Kim's Magic Pop Cinnamon
  • 1/2 box Cheesecake Flavor Pudding Mix
  • 1 small container Fage 0% Greek Yogurt
  • 1 tsp Unsweetened Almond Milk
  • Blueberries, Blackberries, and Raspberries

Mix cheesecake pudding mix with unsweetened almond milk in a small bowl

Mix pudding/milk mixture into greek yogurt until blended smooth

Spread yogurt mixture on the Kim's magic pop and top with berries

Serve immediately!

As a kid, my favorite thing in the world was when the ice cream man came through our neighborhood. Nothing like hearing the music coming down the block and scrambling to find as much change as you could in the couch cushions.  The biggest smile on my face when the ice cream man handed me that $.75 (showing my age a bit) Creamsicle bar.  Now as an adult, I still love a good Creamsicle bar but I also found a way to recreate the flavor in a dip!

Creamsicle Fluff Dip

Ingredients-
8oz package softened cream cheese
1 jar of marshmallow cream
1 1/2 tablespoons orange jello powder
Dash of vanilla extract
Directions-
1. Whip softened cream cheese until light and fluffy.
2. Blend marshmallow cream, orange jello powder, and vanilla extract with the cream cheese until well mixed.
3. Serve immediately or chill prior to serving.
4. Serve with the cookies of your choice.
5. NOM NOM NOM!
Creamsicle Fluff Dip

The Creamsicle Fluff Dip is a great recipe to take to any family gathering or any party you are hosting. It is so good, you will want to eat it with a spoon. If you have a large party, it is easily doubled and is less than $5 to make. Valentine’s Day Cast Iron Brownies

Valentine’s Day is approaching quickly and I have the perfect dessert to make. The Valentine’s Day Cast Iron Brownies are very simple to make and can be altered with your favorite toppings. My favorite part of cast iron brownies is that every slice has that nice chewy, crusty edge. Also if you aren’t a huge brownie fan you could also try this with your favorite roll of cookie dough. So many great options to make this quick dish for the one you love.

Valentine’s Day Cast Iron Brownies

Ingredients:

  • 1 8×8 Pouch of Brownie Mix *I found this for $1.00 at Walmart*
  • Egg
  • Water
  • Oil
  • 1/2 cup Semisweet Chocolate Chips
  • 1/2 a bag of Reese’s Mini’s
  • Valentine’s Sixlets *I found these at the Dollar Tree but I am sure you can find them at Walmart*

Directions:

  1. Preheat your oven to 350 degrees.
  2. Mix the Brownie mix according to the package.
  3. Pour directly into your seasoned cast iron skillet.
  4. Bake for 20 minutes(it will continue to cook a little when you pull it).
  5. Immediately sprinkle with chocolate chips and cover with a lid for about 5 minutes.
  6. Slice the Reese’s Mini’s in half and sprinkle over the top of the brownies.
  7. Sprinkle the Sixlets(of any other candies you purchased) over the top of the brownies.
  8. Serve warm and enjoy!

*You could also add a scoop of ice cream on the side

Budget Friendly Chili

budget friendly chili One of my favorite winter time meals is chili! Not only is it hearty and warm, but also can be very inexpensive.  I love this budget-friendly chili for my family. It makes enough to feed the six of us and then the next day I like to add macaroni noodles to it for chili mac. I make mine on a stove but you could definitely throw this together in a crock pot if you like. The best part about chili is you can’t really go wrong and can add as many toppings as you like. My husband likes cheese and jalapenos in his and I like cream cheese and cheddar cheese in mine.

Budget-Friendly Chili

Ingredients:

  • 1 pound of ground beef
  • 1 pkg chili seasoning *I use McCormick but you can use any brand and flavor*
  • Two 20oz cans petite diced tomatoes
  • Two 15.5oz can of chili beans *you can use hot if you like that more*
  • 15.5oz can of light kidney beans
  • 15.5oz can of dark kidney beans
  • salt & pepper to taste

Directions:

  1. Brown ground beef and drain.
  2. Mix ground beef and package of chili seasoning in a stock pot.
  3. Open and dump in cans of tomatoes and beans.
  4. Stir until mixed thoroughly.
  5. Season with salt and pepper.
  6. Bring to a boil and then simmer for 30 minutes.
  7. Serve with your favorite toppings.

This Budget Friendly Chili only cost me less than $10.00!! How often can you feed a family of six for less than $10??? Yeah very rare, especially since I can stretch it into 2 dinners by adding noodles the next day! With this savings you should definitely check out my dessert recipes! Praline Apple Pie Dumplings

I’ll just admit that I have a small Pinterest addiction..okay I’ll be honest and say I have a HUGE Pinterest addiction. During my hours of scrolling, I found an amazing recipe for Apple Pie Dumplings by Spend with Pennies. It only had 2 ingredients so I figured I couldn’t screw it up, right? Great thing was, I already had the ingredients in my house! I made the recipe and though it was really good, I felt like it was missing something. I decided to make a new batch but just tweak it a bit. Again, with ingredients I already had in my house.

Praline Apple Pie Dumplings

Ingredients

  • 1 can Apple Pie filling
  • 1 can Pillsbury Crescent Rolls (save yourself the trouble and don’t buy generic)
  • 3/4 cup coarsely chopped Pecans *save about a tablespoon for garnish if you like*
  • 1 jar Caramel topping
  • 1/2 teaspoon cinnamon

Directions

  1. Preheat oven to 375 degrees.
  2. Empty can of Apple Pie filling into a mixing bowl. Mix in cinnamon and pecans.
  3. Open crescent rolls and remove each half.
  4. Cut each half in half. You should have 4 long pieces. Cut each long piece into 3 pieces making 12 pieces. Roll all 12 pieces into balls.
  5. Toss the 12 pieces into the apple pie filling.
  6. Pour into a shallow baking dish, making sure the crescent balls are towards the top.
  7. Bake for 25-30 minutes.
  8. Let cool a couple minutes and then scoop into dish, garnish with pecans and drizzle with caramel.

*serve with vanilla ice cream if you like*

I absolutely love the texture of the pecans and the sweetness of the caramel drizzle. I will definitely be making this again. You can’t beat the ease of only 5 ingredients.
