Weight Watchers Hawaiian English Muffin Pizza

 

Since starting Weight Watchers I have found my biggest struggle is lunch options. Breakfast is easy and dinner is easy but by the time lunch rolls around I am either still full from breakfast or I get so busy that dinner is right around the corner. So basically I need really simple quick options or else I am going to just skip lunch altogether and I won’t get my points and basically I’ll stay fat(okay maybe not really but it is important to get all your points to maintain a healthy balance).

Simple lunch for me would be pizza but I rather not spend 8pts on a thin crust pepperoni slice when I could eat this quick Weight Watchers Hawaiian English Muffin Pizza. You can make them in just a couple of minutes and they are only 3pts for both halves.

So simple, so yummy, and only 3pts

  • 1 Healthy Life English Muffin, Lite
  • 2 tbsp pizza sauce
  • 1 slice Canadian bacon
  • 1/2 oz pineapple chunks, diced
  • 2 tbsp fat free mozzarella cheese

Split apart english muffin with a fork

Spoon 1 tbsp of pizza sauce onto each english muffin half

Top with canadian bacon, pineapple, and cheese

Place both english muffin halves into air fryer basket

Cover with a piece of parchment paper and air fryer trivet

Cook for 2 minutes at 370 degrees

Remove and serve!

Seems like I am always looking for new ways to make chicken breast. Since they are on the Zero Points Food List for Weight Watchers it is typically my go-to for dinner. However, chicken can get very boring real quick. Luckily, there are so many great ideas for spicing up dinner on Pinterest. I went through quite a few recipes and decided foil pack dinners seemed easy enough. Tossed in the usual spice concoction that I use on almost everything and went with it. So happy I did, because these Weight Watchers Italian Chicken and Veggie Foil Packets are AMAZING.

What are some ways you like to change chicken when you are in a rut? Have you made foil pack dinners before? I am going to take this recipe camping with us on our next trip. I bet it would be perfect on the campfire or the grill.

Easy toss together dinner that is yummy and healthy

  • 2 skinless boneless chicken breast, small
  • 1 cup broccoli florets
  • 1 cup uncooked bell pepper, any color, sliced
  • 1⁄2 cup grape tomatoes, sliced
  • 1 Tbsp olive oil
  • 1 Tbsp Italian seasoning
  • 1 tsp garlic powder
  • 1 tsp smoked paprika

Preheat oven to 375 degrees

Mix Italian seasoning, garlic powder, paprika, and olive oil in a small bowl

Place chicken breast, broccoli, bell peppers, and grape tomatoes in a gallon size ziploc bag

Pour olive oil mixture in bag and gently toss until all ingredients are coated

Place chicken breasts in two disposable foil bread pan and top with veggies

Cover with foil and bake for 35-40 minutes or until chicken is cooked through

Weight Watchers Fruit Pizza

The biggest thing I missed when I started Weight Watchers was something sweet and refreshing. It took me a couple weeks to get familiar with the way Weight Watchers worked but once I did I realized it wasn’t so hard to stay within my points. It wasn’t like a typical diet and the Weight Watchers app makes it simple to track. I experimented with quite a few ways to make this Weight Watchers Fruit Pizza. Of course, you can change it up to fit your craving too.

I love how you can change up the ingredients of this Fruit Pizza in order to get different flavors. Id love to make one with PB2 and bananas next time. Even my kids loved this and they got to make it themselves so of course, theirs had fruit faces LOL

  • 2 Kim's Magic Pop Cinnamon
  • 1/2 box Cheesecake Flavor Pudding Mix
  • 1 small container Fage 0% Greek Yogurt
  • 1 tsp Unsweetened Almond Milk
  • Blueberries, Blackberries, and Raspberries

Mix cheesecake pudding mix with unsweetened almond milk in a small bowl

Mix pudding/milk mixture into greek yogurt until blended smooth

Spread yogurt mixture on the Kim's magic pop and top with berries

Serve immediately!

It never fails that by the time the end of the year rolls around my budget is completely out of whack. I blame having 4 kids and a disabled husband, however, it also might be that I have a shopping addiction talent. Groupon currently has 81,643 free coupons at 11,255 stores. That is a lot of stores and a lot of coupons.

A couple of years ago we purchased a Sleep Number bed and since it was a bit pricey I was unable to buy some of the accessories I wanted to have. Well thanks to Groupon Coupons, I was able to order some Sleep Number pillows and sheets at a really decent price. Also, I never had to leave the comfort of my own home. Another place I tend to spend a lot of money throughout the year is on contact lenses. We have 3 family members that require glasses or contacts and it gets pretty expensive when insurance only covers a small portion. Luckily, I found that Lens.com also has a Groupon Coupons page.  I love the Free Shipping and $5 off. You wouldn’t think shipping contacts would be so expensive but it totally is.

Christmas break is approaching fast! Pretty sure every morning my kids remind me how many days are left. By the way, it is SEVEN. Seven more days to figure out how the heck I am going to keep my kids busy for 2 weeks. Since it is freezing here in the Midwest, it is best to stay indoors as much as possible. Unless we get snow of course.

You can search for kids activities, wine tours for date night, and sports events or concerts. You can see the reviews for each activity, the discount amount being offered, and a detailed description of the facility. This is also a great way to plan a birthday party for your kids. Did I mention that Groupon makes it AFFORDABLE for a family of 6 to do anything fun?

So now what to do..what to do? I am thinking some mommy and me painting classes, a trip to trampoline park, and an evening playing arcade games.

As a kid, my favorite thing in the world was when the ice cream man came through our neighborhood. Nothing like hearing the music coming down the block and scrambling to find as much change as you could in the couch cushions.  The biggest smile on my face when the ice cream man handed me that $.75 (showing my age a bit) Creamsicle bar.  Now as an adult, I still love a good Creamsicle bar but I also found a way to recreate the flavor in a dip!

Creamsicle Fluff Dip

Ingredients-
8oz package softened cream cheese
1 jar of marshmallow cream
1 1/2 tablespoons orange jello powder
Dash of vanilla extract
Directions-
1. Whip softened cream cheese until light and fluffy.
2. Blend marshmallow cream, orange jello powder, and vanilla extract with the cream cheese until well mixed.
3. Serve immediately or chill prior to serving.
4. Serve with the cookies of your choice.
5. NOM NOM NOM!

The Creamsicle Fluff Dip is a great recipe to take to any family gathering or any party you are hosting. It is so good, you will want to eat it with a spoon. If you have a large party, it is easily doubled and is less than $5 to make. 10 Travel Activities For Kids 

Do you find yourself dreading even thinking about traveling with kids? Long or short road trips with kids aren’t always fun fests. But they are doable, and yes can even be enjoyable! Here are some fun activities to keep the kids busy and not saying, “Are we there yet?” a million times!

 

  • Dry erase markers and a glove. Where would we be in this world if it was not for dry erase markers? One of the best inventions and here is another great use for them! Let the kids draw on the windows with dry erase markers. (Be sure they know not to write anywhere except the windows)! And you don’t have to worry about the “I lost my eraser”, the gloves are perfect because they will always have it on their hand.
  • Pipe cleaners. What creations can be made with pipe cleaners? The possibilities are endless, especially the imagination of children. You can find a jumbo bag on Amazon for cheap!
  • Dollar store toys. This is a great incentive for good behavior. Go to the local dollar store and purchase some dollar items to wrap in gift wrap. Activity books, cars, action figures, stickers, dry erase board, mini dolls and card games are just a few ideas. For each hour (maybe half hour in same cases) let him/her choose a prize to unwrap.
  • Make a busy board. This is more for younger kids. At a younger age, children are so curious about how things work. This busy board will keep the child entertained while they are learning the skills to make buttons and snaps work.
  • Car colors. Who can find all the different colors of cars first? Great activity for all to play. Print a few sheets out and laminate each one so they are reusable. Mark off a car color as you see them with a dry erase marker.
  • I Spy. Super fun printable! I Spy Bingo! You can also laminate this printable also and use bingo markers to dab your spots!
  • Mad Libs. Time to get creative! We love Mad Libs! See how interesting and unique you can make your story! There is even a Mad Libs On Road edition!
  • Glow Sticks. If you’re on the road at night, break out the glow sticks. You can get a pack of 25 of them on Amazon for less than $.60 each. These lights won’t distract the driver, and the kids will still have fun.
  • License Plate Game. You cannot have a road trip without playing the License Plate Game! Laminate these and you have a fun game for the way to and from!
  • Keep A Journal. Start it as soon as you leave your house. Write down each stop you make, the towns/cities you go through. Jot down how long in between towns. If you stop to check out landmarks, take a brochure and keep in your journal. Don’t stop once you’ve reached your destination; write in your journal all the way back home.

 

One more important thing to take on road trips…. SNACKS! “Hangry” kids are no fun! With these 10 fun activities, kids should stay entertained and not have to bicker with one another (fingers crossed)! Safe travels!

Zoo Scavenger Hunt Printable

My favorite thing to do with my kids is take them to the zoo. The St. Louis Zoo is by far the best zoo in the states and if you have never been, you should REALLY put that on your bucket list. Besides the amazing animals, the St. Louis Zoo is FREE admission. We pay the yearly membership, but it is totally worth it since it includes passes for parking, train, shows, and 10% off food and drinks. Since it is only 30 minutes from our home, we take multiple trips there throughout the year(it is open year round).

Each of my kids have their favorite exhibits that they like to see when we are there. Hayden loves to see the penguin exhibit. However, be prepared to freeze because it is like their natural environment inside there. We also have a new polar bear exhibit which is pretty awesome to see.

When we go to the zoo I love for there to be an educational aspect involved for the kids. Now that they are a little older, I make little quiz questions that they have to find the answers to as they walk through the zoo. However, when they were smaller and couldn’t read or write I would make little scavenger hunts for them to do with pictures. It was a nice way to get them involved and helps their fine motor skills in the process.
